This is a staple for my weekend breakfasts. It gives me something to look forward to at the end of the week. You can add or remove the amount of garlic depending on if you’re going out that night!
GARLIC, TOMATO, BASIL BUTTER BEANS with FETA
Servings: 2
Ingredients
- 400 g of butter beans drained and rinsed
- 2 garlic cloves – finely chopped
- 1 punnet good quality cherry tomatoes
- 2 tbsp of olive oil
- 1 bunch of Basil
- 1/2 block of feta
- Salt & pepper
Instructions
- Preheat oven to 160. To a baking tray add the garlic, tomatoes, olive oil and butter beans. Season.
- Add to oven and cook slowly for 25 minutes.
- Remove and mix through basil leaves and crumble feta.
- Serve with sourdough bread and a good bitter green salad
