GARLIC, TOMATO, BASIL BUTTER BEANS with FETA

Ingredients

  • 400 g of butter beans drained and rinsed
  • 2 garlic cloves - finely chopped
  • 1 punnet good quality cherry tomatoes
  • 2 tbsp of olive oil
  • 1 bunch of Basil
  • 1/2 block of feta
  • Salt & pepper

Instructions

  • Preheat oven to 160. To a baking tray add the garlic, tomatoes, olive oil and butter beans. Season.
  • Add to oven and cook slowly for 25 minutes.
  • Remove and mix through basil leaves and crumble feta.
  • Serve with sourdough bread and a good bitter green salad

This recipe tastes better when the sun is out!
