A keto friendly, family friendly, perfect for the weekend breakfast/brunch.
Coconut and Raspberry Pancakes
Servings: 10 pancakes
Ingredients
- 2 eggs
- 3 tbsp of coconut flour
- 1 tsp of gf baking powder
- 1 tsp of cinnamon
- 1 tap of cacao powder
- 150 ml coconut milk
- 1 punnet of raspberries
- 100 g coconut yogurt
Instructions
- Blend together let the mixture set for around 20 minutes.
- Make the coulis by adding raspberries to a pan with 1 tbsp of water on a low heat. Add 1 tsp of maple syrup. Stir until the right consistency.
- Add 3 tbsp of batter for each pancake into a pan and fry until golden on both sides. Pair with raspberry coulis and coconut yoghurt.
